I know what you're thinking… "Brussel sprouts?" But really – these are so, so very good. My sister made these on New Years Eve and they were a huge hit – even with the non-brussel sprout fans. Gracie loves them – and I think they might be my new favorite veggie!
1 1/2 lbs brussel sprouts, trimmed and halved
Olive oil
Kosher salt
Seasoned pepper
5-6 garlic cloves, peeled and minced
Preheat oven to 400 degrees. Place a piece of foil on a cookie sheet and spray with Pam or drizzle with olive oil.
Place brussel sprouts in a bowl, cover with olive oil and season
with kosher salt, seasoned pepper and minced garlic. Mix and spread
onto cookie sheet.
Bake 10 minutes then turn. Bake another 5-10 minutes. Sprouts should be slightly brown on the edges.

We like them roasted with sliced kielbasa .. then just add some sliced bread (or pierogies) and dinner is complete!
I love roasted brussel sprouts – I made them on Thanksgiving and Christmas this year and will make them about once a month (with Tom in grad school three nights per week and just A and me eating them – we have lots of leftovers). I add some more kosher salt at the end right before serving them.
We saw this on Nicole’s blog and tried them this past weekend….probably won’t cook them again…but at least we tried!
Love me some Brussels Sprouts – and this recipe looks so easy! I’ll have to try it soon.
Oh girl, this is my FAVORITE thing to do! I eat brussels ALL the time because I discovered roasting them with garlic = delish! I also love to do the same with cauliflower, sprinkle a little smoked paprika on them and it’s like candy!!
Now, I might have to try that. Never found a brussels recipe I liked but this actually looks good!
