A few weeks ago, I enjoyed a thoroughly yummy dinner at The Cookshop Restaurant in New York. It was fabulous. One of the specials that night was an heirloom tomato salad that was divine. I was determined to recreate it! So here's my go at it! I made this for two (along with roasted asparagus and steakhouse steaks) but it could easily have made four smaller servings.
Heirloom Tomato Salad
1 pound heirloom tomatoes (I got mine at Trader Joes and they were delicious and only $3.99.)
3 tablespoons olive oil
2 tablespoons red wine vinegar
coarse salt and fresh ground pepper
1 bunch arugula, washed and dried
goat cheese (optional)
1. Halve tomatoes and place on salad plates. Arrange some arugula on one side of the tomatoes.
2. Whisk together olive oil, red wine vinegar. Season with salt and pepper to taste.
3. Before serving, drizzle tomatoes and arugula with dressing. Top with a good-sized slice of goat cheese, if desired.














goat cheese is never optional.

I never know what to do with red wine vinegar! I am so sick of balsalmic I could cry, and the apple cider vinegar I use to clean my windows so it doesn't seem to be very appetizing to me.
