This is one of me and my kids favorites! We have this often when my husband (Mr. Where's The Beef) is traveling. Even Colin loves the black beans! Its simple, inexpensive and makes terrific leftovers.
Black Beans Tacos
Black beans (recipe follows)
Rice
Diced Tomatoes
Shredded lettuce
Shredded cheese
Salsa
Guacamole
Flour Tortillas (Trader Joe's has the best!)
Set up an assembly line and make your favorite!
Black Beans
2 cans black beans, drained
1 clove garlic, crushed with knife
1/4 cup diced sweet onion
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
pinch of cayenne pepper (optional)
pinch of cinnamon
pinch of salt
2 tablespoons diced tomatoes
2 tablespoons chopped fresh cilantro
In a large skillet or saucepan, saute whole garlic in 2 tbsp olive oil; remove when golden and discard. Add beans and remaining ingredients; cook over medium heat for 10 to 15 minutes, stirring frequently. Salt to taste.

NICE. Today I asked C if he wanted anything particular for dinner, and he said your black bean tacos. He did NOT mention that you had just posted the recipe, so I just made my own version of them with the stuff I had in the kitchen already... and here they are after all that! I wasn't too far off, but will definitely use THIS recipe next time!!!!! :)
